3 Recipes For Chicken

Chicken is one of your best sources of protein, but eating the same kind of chicken every day can become boring and stale. You need different flavors of chicken and quick preparation time to help you through this seemingly endless cycle. Check out these three recipes for different kinds of chicken.

1. Lemon Grilled Chicken Breasts

Ingredients:

  • 7 skinless, boneless chicken breasts (6 ounce breasts)
  • 2 cloves minced garlic
  • 3 tablespoons lemon juice (fresh)
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt and pepper
  • Cooking spray

Instructions:

  1. Preheat grill to a medium-high heat
  2. Combine chicken, garlic, olive oil, and lemon juice in a plastic, sealable bag
  3. Let marinate in the refrigerator 30 minutes
  4. Remove the chicken from the bag and sprinkle with salt and pepper
  5. Coat grill with cooking spray and place chicken on top
  6. Cook 6 minutes on each side or until done

2. Barbeque Chicken Sandwich

Ingredients:

  • 1 3 1/2-4 pound rotisserie chicken
  • 1/4 cup pickled jalapenos, chopped
  • 1-1 1/2  cups barbeque sauce
  • 4 hamburger buns

Instructions:

  1. Warm rotisserie chicken if necessary
  2. Shred chicken or pull apart into smaller pieces
  3. In bowl, combine the chicken, barbeque sauce, and jalapenos.
  4. Divide mixture evenly to the bottoms of the buns, top with the top sandwich bun, and serve

3. Sweet Mustard Chicken Thighs

Ingredients:

  • 8 skinless, boneless chicken thighs (3 ounce thighs)
  • 1/2 cup mustard
  • 1/3 cup dark brown sugar
  • 1 teaspoon ground allspice
  • 1/4 teaspoon crushed red pepper
  • Cooking spray

Instructions:

  1. Preheat grill to medium-high heat
  2. Combine mustard, brown sugar, allspice, and pepper in small bowl and stir well
  3. Reserve and set aside 1/4 cup of sauce mixture
  4. Coat grill with cooking spray and place chicken on grill rack
  5. Brush 1/2 cup of sauce onto the top of the chicken
  6. Grill chicken for 3-4 minutes
  7. Turn over, brush with the other 1/2 cup of sauce
  8. Cook 3-4 more minutes or until done
  9. Place chicken on serving platter and drizzle with 1/4 cup of sauce that was set aside
