3 Potluck Dishes To Make For Your Next Gathering

Whether you're looking for an easy dish to make for a gathering you're hosting or you need something that will blow the socks off the other guests at a potluck, these five recipes will be crowd favorites.

1. Cheesy Mashed Potatoes

Ingredients:

  • 5 pounds Yukon Gold potatoes (peeled and cut into pieces)
  • 1 cup butter, cubed
  • 1 cup sour cream
  • 1/2 cup heavy whip cream
  • 1 1/2 cups shredded cheddar cheese
  • 1 1/2 cups shredded Monterey Jack cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons minced chives
  • 2 teaspoons salt
  • 3/4 teaspoon pepper

Instructions:

  1. Prepare potatoes and put in stockpot. Add water to cover potatoes. Bring water to boil and reduce heat to medium
  2. Cook, uncovered, until potatoes are tender (about 10-15 minutes)
  3. Drain and transfer to a large bowl. Add butter, sour cream, salt, pepper
  4. Beat until blended. Add in whipping cream and stir in the cheeses and chives
  5. Transfer to baking dish, refrigerate overnight. To serve, put dish in oven at 350 degrees and bake covered for 45 minutes

2. Green Bean Casserole

Ingredients:

  • 1 pound green beans
  • 1 red onion, sliced
  • 1 cup milk (2% recommended)
  • 1 cup low-sodium beef or chicken stock
  • 6 oz. cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons flour
  • 1 tablespoon butter
  • 1/2 cup bread crumbs, tossed with 1 tablespoon olive oil
  • Bag of onion crisps
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 475 degrees
  2. Fill a large pot with water and bring to a boil
  3. Season the green beans with salt and cook for 3 minutes in water
  4. Drain beans and run under cold water to stop cooking
  5. Heat butter in large skillet and add garlic and onions until onions are soft. Add in mushrooms and cook until lightly browned
  6. Stir in the flour and cook for 1 minute. Add in stock and milk. Whisk to prevent lumping
  7. Add in green beans until sauce thickens. Sprinkle in salt and pepper
  8. Pour green beans into casserole dish and top with bread crumbs
  9. Bake for 8-10 minutes. Top with bread crumbs and onion crisps

3. Broccoli and Cheddar Soup

Ingredients:

  • 1 head broccoli, cut into florets then sliced
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1 yellow onion, diced
  • 1 large carrot, diced
  • 2 cloves garlic, chopped
  • 1 cup shredded sharp cheddar cheese
  • 2 cups milk
  • 1 cup beer
  • 1 cup low-sodium chicken stock
  • Salt and pepper to taste

Instructions:

  1. Heat butter in large pot
  2. Add onion, carrot, broccoli and garlic. Cook until vegetables soften
  3. Stir in flour and cook until it covers vegetables. Add in stock and beer. Stir frequently to prevent clumping
  4. Pour mixture into blender and puree until almost smooth
  5. Return to pot and put in milk and cheese. Stir in until cheese is fully melted. Season with salt and pepper
